We Made Kamikatsu Awa Bancha Tea!

Air Travel Tokushima is a Tokushima travel agency that was founded in 1974.

Under our company motto of, "A company that walks hand-in-hand with Tokushima", we aim to be a company that contributes to and is an essential part of the community. With this in mind, we decided we wanted to know more about the nature, history and culture of the community, and that we wanted to find some way to contribute to the preservation of traditional culture and techniques that have been passed down within the community for many years.

Kamikatsu Awa Bancha is a type of tea that has been made using a unique method in Tokushima's town of Kamikatsu since long ago. It has even been designated as a national Important Intangible Folk Cultural Property.

We want to know more about what Kamikatsu has to offer and share it with more people...
With these feelings in mind, we applied to the Kamikatsu Awa Bancha Association's "Barrel Owner Program" in the 2023 fiscal year and began making our own Awa Bancha.

Step 1: Harvesting

July 23rd, 2023 The matured leaves, which have grown thicker, are harvested by hand.

Step 2: Boiling

The leaves are boiled in order to kill enzymes that cause oxidation as well as bacteria that interfere with lactic fermentation.

Step 3: Rubbing the Leaves Together

The leaves are rubbed together in order to cause damage to them, making it easier for them to ferment.

Step 4: Soaking

The leaves are placed into a barrel, ensuring that no air can enter, and fermented for roughly 2 to 4 weeks.

Step 5: Drying

The leaves are sundried for 2 ~ 3 days until the moisture has completely disappeared.

Step 6: Separating & Packaging

The tea stalks, seeds, and vines are removed.

October 15th, 2023 - Finished!
